Rum cake
A cake infused with a buttery rum sauce. 45 mins bake.
Cake
Ingredients
- 1/2 cup sugar
- 1/2 cup butter
- 1 large egg
- 1 cup water
- 120 gram flour
- 3 tsp baking powder
- 1 pinch salt
Instructions
- Preheat over to 350F.
- Combine sugar and butter in a mixing bowl.
- Beat at medium-low speed (4) with a flat beater, until creamy.
- Beat in egg and water.
- Add flour, salt and baking powder while beating.
- Beat until mixed well and smooth (~1 minute).
- Pour into 2 x 4" pans (assume it will double in volume).
- Bake in oven for 45 minutes.
- Pour sauce (below) onto hot cake.
Sauce
Ingredients
- 1/2 cup sugar
- 1/4 cup water
- 1 tbsp butter
- 1/2 cup rum
- 1 tsp vanilla
Instructions
- Combine sugar and water in a saucepan.
- Bring to a boil over medium-high heat.
- Boil and stir until all sugar is dissolved (2 mins).
- Remove from heat.
- Stir in butter, vanilla and brandy.
