Rum cake

A cake infused with a buttery rum sauce. 45 mins bake.

Instructions

  1. Preheat over to 350F.
  2. Combine sugar and butter in a mixing bowl.
  3. Beat at medium-low speed (4) with a flat beater, until creamy.
  4. Beat in egg and water.
  5. Add flour, salt and baking powder while beating.
  6. Beat until mixed well and smooth (~1 minute).
  7. Pour into 2 x 4" pans (assume it will double in volume).
  8. Bake in oven for 45 minutes.
  9. Pour sauce (below) onto hot cake.

Sauce

Instructions

  1. Combine sugar and water in a saucepan.
  2. Bring to a boil over medium-high heat.
  3. Boil and stir until all sugar is dissolved (2 mins).
  4. Remove from heat.
  5. Stir in butter, vanilla and brandy.
