Pear clafouti

Not too sweet pear tart

Instructions

  1. Preheat oven to 375F.
  2. Butter a 10" x 1-1/2" round baking dish.
  3. Combine eggs and sugar in a mixing bowl.
  4. Beat on medium-high (6) speed using a flat beater for 3 minutes until light and fluffy.
  5. Mix in flour, cream, vanilla, lemon zest, salt and rum.
  6. Rest batter for 10 minutes.
  7. Peel, quarter, core and slice pears.
  8. Arrange pears in a single layer in the baking dish, fanning them out.
  9. Pour the batter over the pears.
  10. Bake until the top is golden and the batter is firm (35 minutes).
