Hand-pulled noodles

Minimal individually hand-pulled noodle strips. 90 mins wait.

Ingredients

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Beat at low speed (2) with a dough hook for 10 mins (until a very smooth dough forms).
  3. Remove from bowl and place onto a well-floured surface.
  4. Divide into two equal parts.
  5. Roll out each part into a rectangle, 5mm thick.
  6. Coat with oil.
  7. Cover with cling film.
  8. Wait 30 - 90 minutes (longer is better).
  9. Cut into 1cm strips.
  10. Pull each strip.
  11. Cook in boiling water for 1 minute.
