Hand-pulled noodles
Minimal individually hand-pulled noodle strips. 90 mins wait.
Ingredients
- 200 gram flour
- 120 gram water
- 1/4 tsp salt
Instructions
- Combine all ingredients in a mixing bowl.
- Beat at low speed (2) with a dough hook for 10 mins (until a very smooth dough forms).
- Remove from bowl and place onto a well-floured surface.
- Divide into two equal parts.
- Roll out each part into a rectangle, 5mm thick.
- Coat with oil.
- Cover with cling film.
- Wait 30 - 90 minutes (longer is better).
- Cut into 1cm strips.
- Pull each strip.
- Cook in boiling water for 1 minute.
