Ma Lai Go
Easy Chinese steamed cake.
Ingredients
- 3 large eggs (at room temperature)
- 1/4 cup olive oil
- 3/4 cup sugar
- 1-1/2 tsp vanilla
- 1/3 cup half and half
- 1-1/2 tbsp custard powder (or substitute corn starch)
- 120 gram flour
- 1/8 tsp salt
- 4 tsp baking powder
Instructions
- Combine eggs, olive oil and sugar in a mixing bowl.
- Beat at high speed (8) with a flat beater for 5 minutes until well combined and fluffy.
- Add vanilla, half and half and custard powder.
- Beat at high speed (8) for 1 minute.
- Sift flour, salt and baking powder into the batter.
- Fold dry ingredients into the batter, breaking up large lumps without overworking the batter.
- Rest the batter for 30 minutes.
- Line a 9in stainless steel steamer with parchment paper.
- Gently stir the batter to mix it uniformly being careful to not disturb the air pockets.
- Pour the batter into the steamer.
- Heat up the steamer, letting the batter rest for 10 minutes.
- Steam the batter for 30 minutes.
