Ma Lai Go

Easy Chinese steamed cake.

  1. Combine eggs, olive oil and sugar in a mixing bowl.
  2. Beat at high speed (8) with a flat beater for 5 minutes until well combined and fluffy.
  3. Add vanilla, half and half and custard powder.
  4. Beat at high speed (8) for 1 minute.
  5. Sift flour, salt and baking powder into the batter.
  6. Fold dry ingredients into the batter, breaking up large lumps without overworking the batter.
  7. Rest the batter for 30 minutes.
  8. Line a 9in stainless steel steamer with parchment paper.
  9. Gently stir the batter to mix it uniformly being careful to not disturb the air pockets.
  10. Pour the batter into the steamer.
  11. Heat up the steamer, letting the batter rest for 10 minutes.
  12. Steam the batter for 30 minutes.
